Basic Roasted Green Beans

Great with chicken, beef or fish.


  • 1 lb. green beans, stem end trimmed
  • 1-3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • Black pepper
  • Lemon juice (optional)


Preheat oven to 475 degrees. Move a rack into the center of the oven. Line a baking sheet with parchment paper and set aside. Drizzle olive oil onto green beans. Sprinkle with salt and toss to coat. Add a little more salt, pepper and a drizzle of lemon juice (optional). Spread on baking sheet and roast for about 15 minutes until tender and slightly browned.
